Apple Sausage Salad with Poppy Seed Dressing

Mixed salad greens

1 green apple, sliced

1/2 red onion, sliced thin

1/2 cup chopped walnuts

1/2 cup dried cranberries

Crumbled bleu cheese (optional)


Slice Apple Cinnamon sausage into discs cut roughly ¼” thick, and brown slightly in a pan.

Toss with mixed greens, apple slices, red onion slices, walnuts, cranberries and bleu cheese.

Drizzle with poppy seed dressing, and serve.

Dressing Ingredients

1/3 cup white sugar

1/2 cup raspberry vinegar

1 teaspoon salt

1 teaspoon ground dry mustard

1 teaspoon finely diced red onion

3/4 cup vegetable oil

1 Tablespoon poppy seeds

Poppy Seed Dressing Directions

Combine all ingredients (sugar, raspberry vinegar, salt, ground dry mustard, red onion, oil and poppy seeds) in a small food processor. Blend for 20 seconds. Remove from food processor, stir slightly.

Can be stored covered in the refigerator for one week.
